The Technique 

Bosc Pears 

Bosc pears are a hearty variety known for their firm flesh making them an excellent choice to use when cooking applications are in order. Expect a sweet, crisp fruit that is ideal for tarts & cakes. They are available in markets beginning in September & last through the winter months. Choose firm fruit & allow it to ripen at room temperature. Bosc pears have a russeting over the surface that is characteristic of the variety. Under this brown coloration, the fruit will begin as a green hue & turn a deep gold as the pears ripen. Slight wrinkling near the stem base are further indicators the flesh has changed from being firm to soft. Pears Belle Hèléne is a classic French dessert consisting of poached pears, ice cream, chocolate sauce & almonds. It was named for the operetta by Jacques Offenbach, La belle Hèléne that was created by French chef Augustine Escoffier in the mid 1800’s. Bring the water, the sugar, the lemon juice & the vanilla bean paste to a boil in a 3-quart saucepan over Medium-High heat. Meanwhile, peel the pear & slice it in half. Drop the fruit into the poaching liquid & reduce the heat to Medium-Low. Gently simmer the pear 30 minutes or until tender. Turn off the heat. Let stand 5 minutes.

Remove the pear halves from the poaching liquid & place on a cutting board. Gently remove the core, the seeds & the thin string that runs from the stem to the base of the fruit using a paring knife & an extra small ice cream disher.
