Twice Baked Potatoes

Twice baked potatoes were reserved for company & special occasions when I was growing up. They are rich & flavorful as often times they are filled with butter, a variety of cheeses, fresh herbs & sometimes smoky bacon. The potatoes make a lovely presentation on the plate & pair well with Buttermilk-Blue Cheese Wedge SaladsPan-Seared Rosemary-Garlic Ribeye Steaks or Pan-Seared New York Strip Steaks. The bonus is that Cheddar-Parmesan Twice Baked Potatoes may be prepared ahead of time, then heated until the filling is hot & the cheese over the surface melts. Aside from the wonderful flavor a twice baked potato offers, you may enjoy savoring the crisp skin, too. Brush oil on the exterior of the potatoes & sprinkle with kosher salt before placing them in the oven for added flavor. Cheddar-Parmesan Twice Baked Potatoes

make 4 servings

4 {8-oz} russet potatoes
1 {8-oz} container sour cream
3 to 4 Tbsp whole milk
2 Tbsp butter
1 tsp kosher salt
1/8 tsp freshly ground pepper
3/4 cup shredded Cheddar cheese, divided
1/4 cup freshly shredded Parmesan cheese

Preheat the oven to 400 degrees. Scrub the exterior of the potatoes with a vegetable brush. Pierce each potato several times with a fork. Place on a half sheet pan. Bake 1 hour & 15 minutes or until the potatoes are tender & give easily when gently pressed with your fingers or a fork.

Reduce the oven temperature to 350 degrees. Slice an oval shape from the center of each potato using a paring knife & remove the exterior portion. Transfer the cooked potato with a spoon to a medium bowl. Leave a 1/4-inch border inside of the potato skin as it will aide in maintaining its shape. Add the sour cream, the milk, the butter, the salt & the pepper to the cooked potato, then whip vigorously using a fork until smooth. Fold in 1/2 cup Cheddar & the Parmesan cheese. Stuff the potato shells with the mashed mixture filling just over to top of the skins. Save any that remains for another use. Place the filled potatoes on a half sheet pan & top with the remaining 1/4 cup Cheddar cheese. Bake an additional 15 minutes or until throughly heated & the cheese melts.

How To Make Twice Baked Potatoes

Russet potatoes are a wonderful choice for making simple baked potatoes, twice baked potatoes, French fries & mashed potatoes. When mashed potatoes are in order, whole milk, heavy cream, Greek yogurt & butter are excellent choices to create that soft, fluffy texture. Use them interchangeably when preparing Cheddar-Parmesan Twice Baked Potatoes, if desired.
