How To Make Gendarmes Cookies

Gendarmes cookies may be identified by their oval shape commonly prepared using a classic polvoron dough. Expect a yield of approximately 5 dozen from one recipe. They are effortless to replicate & have a lovely sheen when brushed with an egg wash before baking.

Prepare the Polvoron dough as directed. Preheat the oven to 350 degrees. Roll the dough to a 1/8-inch thickness. Cut 4 3/4 x 1 3/4-inch oval shapes & place on parchment paper lined baking sheets. Using a sharp paring knife, create several indentations in the dough lengthwise from tip to tip. Whisk together an egg yolk & a smattering of water. Brush over the shaped dough. Bake 12 to 14 minutes. Cool completely.
