Romaine lettuce, also known as cos lettuce, is a heat tolerant variety grown on stalks. It adds wonderful texture to salads & sandwiches due to its crisp bite. Although many greens may be used, romaine lettuce is the traditional choice for making a Caesar salad & since its a sturdy pick, it may be grilled, too, then served with a simple Red Wine-Dijon Vinaigrette & shaved parmesan. How To Store & Clean Romaine Lettuce

Romaine lettuce may be stored up to a week in the refrigerator. Using a chef knife, slice the stem end away from the lettuce. Unroll several feet of paper towels on the countertop, then place the leaves side by side over it. Roll up the lettuce then place it back into the plastic bag you brought it home in. Store in the vegetable crisper until ready to clean for use in Classic Cobb Salads, BLT’s & Club sandwiches.

Place the romaine lettuce leaves in a vegetable colander. Rinse under cool tap water to remove any dirt. Be certain to check the crevasses well. Shake the leaves over the kitchen sink of any droplets. Dry them further by rolling them again in paper towels & shake them again. This will allow dressings & vinaigrettes to cling better to the lettuces. Use as directed in specific recipe applications.
