The Technique

Queso Oaxaca

Queso Oaxaca is a mild white semi-hard Mexican cow cheese that has a similar string texture to it much like mozzarella. It is often used over many classic Mexican tortas but it’s well known as a good melting cheese, too. This popular choice may also be referred to as quesillo. Queso Oaxaca is made by stretching the curds into long, smooth ropes that is then wrapped into compact baseball-sized portions. Once home & ready for use, the cheese may be unwound & torn into strips. A 1-ounce portion of Queso Oaxaca has about 100 calories & approximately 8 grams of fat. Nutritionally speaking, the cheese is an excellent source of protein & calcium. Queso Oaxaca is often used in many authentic Mexican cuisine classic recipes.

If preparing Queso Oaxaca from scratch, this fresh cheese doesn’t need to age so it has a general shelf life of about 2 weeks. When purchasing from your local market, after opening use within 90 days. Any unused portion of cheese should be stored in the original packaging, then covered well. Place it in a small zip-top bag, press all of the air from it & seal. Store the cheese in a cold portion of the refrigerator, generally a drawer that isn’t opened frequently is the best place for it.
