Whole Wheat Buttermilk Waffles

Whole Wheat Buttermilk Waffles offer elevated nutritional value without compromising good taste. They may be prepared as is, accompanied with Blueberry-Lemon Jam or fresh blueberries may be sprinkled over the batter before closing the lid for a delicious variation. Waffles may be cooked & placed in zip top bags then stored in the freezer up to one month. Place them in the toaster several minutes to thaw & crisp them for a quick breakfast anytime. 1 cup all purpose flour
2/3 cup whole wheat flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp kosher salt
1 1/2 cups whole buttermilk
2 eggs, lightly beaten
3 Tbsp melted butter
1/4 tsp vanilla extract
Maple syrup
Garnish: Fresh blueberries

Preheat an 8-inch round waffle maker. Whisk together the all purpose flour, the whole wheat flour, the baking powder, the baking soda & the salt in a large bowl. Whisk in the buttermilk, the eggs, the butter & the vanilla. Raise the lid & lightly grease the waffle grids with cooking spray. Pour a heaping 1/2 cup of the batter over the grids, spreading it evenly over the surface with a small offset spatula, if necessary. Close the lid & cook 3 minutes or until the steam subsides. Remove the waffles with nylon tip tongs. Repeat with the remaining waffle batter. Drizzle with maple syrup & garnish, if desired.

How To Make Whole Wheat Buttermilk Waffles

Preheat the waffle maker 5 to 10 minutes before you begin mixing the batter to ensure it cooks quickly & accurately. When the steam subsides from pouring out of the machine, that is your cue the waffles are ready to be removed. Keep them warm in a 200 degree oven on a wire rack over a half sheet pan up to 30 minutes until ready to serve, if desired.
