Miniature Chocolate-Sour Cream Cupcakes are the ideal dessert to serve when casual entertaining is in order. These rich little gems may be adorn with chocolate or vanilla frosting, then topped with chocolate curls to really send the look & the taste over the edge. Be certain when portioning the batter to simply fill the paper liners half way so the cakes rise just to the top of the liners. Learn how to make a lovely variation on a tried & true classic.

 Filling the paper liners half full produces a cupcake that rises just to the top of the liner with an ever so slight dome.

1 cup dark brown sugar
1/4 cup butter, softened
1 egg
1 tsp vanilla extract
1 1/4 cups all purpose flour
1/4 cup cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp table salt
1/2 cup sour cream
1/2 cup hot coffee
Chocolate-Sour Cream Frosting

Preheat the oven to 350 degrees. Line two miniature muffin tins with 40 paper liners. Cream the butter & the brown sugar in a stand mixer on Medium 3 to 4 minutes. Stop the mixer occasionally & scrape down the bowl sides using a rubber spatula. Add the egg & the vanilla. Beat on Low speed just until the yolk disappears. Whisk together the flour, the cocoa, the baking powder, the baking soda & the salt. Add alternately with the sour cream & blend on Low speed just until combined. Slowly pour the coffee into the batter while the mixer is running on Low speed. Blend the mixture just until combined. Portion the batter between the cupcake liners filling each about half full. Bake 10 to 12 minutes with both pans on the center oven rack. The cupcakes should appear slightly puffed & a wooden pick will test clean. Cool completely. Prepare the frosting as directed. Decorate the cupcakes as desired.
