How To Make Mini Chocolate Chip Cookie Ice Cream Sandwiches
One recipe of Miniature Classic Chocolate Chip Cookie Dough that is prepared as directed will yield approximately 4 dozen ice cream sandwiches. When entertaining, expect that each guest will indulge in two or three.
The Technique
Place a quarter sheet pan lined with parchment in freezer 30 minutes. Portion level scoops of vanilla ice cream using a 4 teaspoon-size, standard cookie scoop over the parchment paper. Freeze up to 12 hours in advance. Sandwich the ice cream between 2 Miniature Classic Chocolate Chip Cookies just before serving.
