Meringue Powder
Meringue powder is a safe substitute to use in place of raw egg whites in recipes. Formulas generally consist of dried egg whites, cornstarch, sugar, citric acid & stabilizers. Meringue powder is most commonly included in many royal icing & frostings but it may also be added to meringue cookie formulas or pie meringues in place of raw egg whites. It provides a stiff stability to these items in particular. Other recommended uses for meringue powder include adding it to frostings where marshmallow & whipped cream are used to increase a sound structure. How To Make Clear Edible Glue With Meringue Powder
Meringue powder has several uses in the bakeshop. It may be blended with powdered sugar & water to produce Classic Royal Icing to flood Christmas cookies or a bit of food coloring paste may be added, then placed in a pastry bag fit with a very small tip to decorate them with fine details. It may also be used with a smattering of water to make a Clear Edible Glue so sparkling sugars & sprinkles may safely be added after the baking process.
The Technique
This simple recipe formula will yield approximately 1 tablespoon, more than enough to decorate several recipes of Christmas cookies. Whisk together 1 tablespoon hot water & 1 teaspoon meringue powder in a small bowl. Pour the mixture through a fine wire mesh strainer. Use as directed in specific recipe applications with a small pastry or paint brush.
