Raspberry-Strawberry Jam

Aside from accompanying a selection of homemade breakfast breads such as Buttermilk-Cornmeal English Muffins & Cornmeal SconesRaspberry-Strawberry Jam is a delicious blend of fruit that may be used for a number of lovely dessert applications. Jam is essentially fruit & sugar that is cooked down to a spreadable consistency. When it’s prepared without pectin, expect a softer texture & just know the thickness will slightly vary each time you prepare it as the juiciness from the fruit & berries will vary throughout the season thus the cooking time may be slightly longer or less to achieve desired results. makes 1/2 cup

1 cup fresh raspberries
1 cup strawberries, hulled & quartered
1/2 cup sugar
1/4 cup water
3 Tbsp fresh lemon juice

Combine all of the ingredients in a 3-quart saucepan. Bring to a boil over Medium-High heat then reduce the heat to Medium. Cook, stirring occasionally, 5 minutes. Then stir the mixture constantly with a wooden spoon an additional 8 to 10 minutes or until thickened. The fruit will have a jam like consistency on the pot sides during stirring. Remove from the heat, transfer to a glass bowl & chill 2 to 24 hours.

How To Make Raspberry-Strawberry Jam

Using a 3-quart pot to prepare this small batch jam may seem like a large choice however, as the fruit comes to a boil & begins to cook down, it will bubble vigorously & climb up the sides. Whenever cooking fresh fruit in this manner, never leave the ingredients to cook on their own. Keep a close watch so adjustments may be made, if necessary.
