Quinoa
Quinoa is a seed possessing many grain-like characteristics. This superfood shares the same botanical family as swiss chard, spinach & beets that can typically be found near the grains & flour varieties in your local market. Quinoa offers toothsome texture to many recipes. Learn how to cook Basic Quinoa that may be used for a variety of applications.
Basic Quinoa
makes about 3 cups
2 cups water
1/4 tsp kosher salt
1 cup quinoa
Bring the water & the salt to a boil over Medium-High heat in a 2 quart saucepan. Meanwhile, rinse the quinoa in fine wire mesh colander & stir it into the water. Reduce the heat to Medium-Low & simmer, covered, 15 minutes or until the liquid is absorbed. Remove from the heat & uncover the quinoa. Let stand 5 minutes. Fluff the quinoa with a fork & transfer to a large bowl. Use as directed in specific recipe applications.

How To Use Cooked Quinoa
Quinoa can be used in hot & cold recipe applications. The fine texture adds wonderful interest to a variety of salads & side dishes such as Walnut-Goat Cheese Spring Salad. Follow these additional pointers for success in your own kitchen.
The Technique
When preparations are to be made for cold salad applications, drizzle with a little olive oil & allow it to cool completely. Chill well & add the remaining ingredients or integrate as directed according to specific recipe applications. Cooked quinoa can be added to soups to boost nutritional value. Spoon a bit into bowls just before serving.
