How To Broil

Broiling is a direct heat cooking method that relies on a hot flame & typically takes place in a gas range or salamander. The food is cooked one side at a time so it’s turned during the procedure in order to create a browned or charred appearance & to ensure it’s evenly done. Broiling may be used to cook vegetables such as poblano peppers for use in Chiles Rellenos or the tomatillos found in Charred Salsa Verde that may in turn be layered in a dish of tempting chicken enchiladas. The broiling technique is also utilized when making Croque Monsieur & Croque Madame as well as tailgating recipe favorites including Game Day Italian Dip Sliders. Learn the basic procedure for getting broiling underway in your very own kitchen.

How To Broil

Many beef cuts such as Flank Steak, Top Round Steak & Top Sirloin Steak are ideal candidates for this type of cooking method. Broiling is also a good procedure to use in order to prepare crostini toasts, croutons & to brown cheese over appetizers & pizza. The main point to know is that it’s crucial to use the correct pan for safety reasons. No glass or ceramic dishes should go under the broiling element as they could crack or shatter under the extreme heat conditions. Some earthware & crocks used for French onion soup are fired at high enough temperatures to withstand the heat. Make certain the bottom is marked as broiler safe before using.

Once the beef has been trimmed using a sharpened knife & seasoned or marinated, it will be ready for broiling. Place the meat on a rack over a heavy half sheet pan. Position one of the oven racks at least 6 inches from the heat source. Broil 4 to 6 minutes per side depending on the thickness of the beef cut or until an internal temperature registers approximately 130 degrees.
