Fried Okra & Tomato Napoleon With Lady Peas

make 4 servings

2 ripe slicing tomatoes such as Better Boy or Beefsteak
Buttermilk Fried Green Tomatoes
1 cup Lemon-Thyme Fresh Lady Pea Relish
1/2 cup yellow grape tomatoes such as Golden Sweet
Buttermilk Fried Okra
Lemon-Honey Vinaigrette
Kosher salt & freshly ground pepper
Garnish: Fresh thyme springs

Layer the ripe slicing tomatoes with the Buttermilk Fried Green Tomatoes between 4 plates. Arrange the Lemon-Thyme Fresh Lady Pea Relish, the grape tomatoes & the Buttermilk Fried Okra over the top & around them. Drizzle with the Lemon-Honey Vinaigrette. Season with kosher salt & freshly ground pepper. Garnish, if desired.

1/3 cup fresh lemon juice
2 Tbsp white wine vinegar
1 Tbsp fresh chopped thyme leaves
1 Tbsp honey
1 small garlic clove, pressed
1/3 cup extra virgin olive oil
Kosher salt & freshly ground pepper
3 cups cooked Basic Fresh Lady Peas
Garnish: Fresh thyme sprigs

Whisk together first 5 ingredients. Whisk in the oil in a slow steady stream. Season with salt & pepper. Add the cooked Basic Fresh Lady Peas. Garnish, if desired. Chill 2 to 24 hours. Store in the refrigerator up to 5 days.

Place a damp kitchen towel under a clean cutting board. This will keep the board stable & prevent it from moving when in use. Place a tomato on the board & position it horizontally. Slice the stem end away using a utility knife. This type of knife is larger than a paring knife yet smaller than a bread knife. The key to perfect tomato slices is using a tool with a serrated edge in order to slice cleanly through the outer skin. If desired, you may cut around the core & save that little bit of tomato for another salad application. Proceed to cut each tomato into 1/4-inch thick slices. Use as directed in specific recipe applications.
