Blueberry Multigrain Pancakes

Frozen, fresh blueberries are a wonderful addition to a multigrain pancake recipe. If you have stored the fruit in the freezer, it may be added to the batter during cooking. Conversely, if you have a pint in the refrigerator, they too may be used all the same. Multigrain pancakes are filled with wholesome nutrition including fiber, calcium & protein by using beneficial ingredients such as whole wheat flour, flax & buttermilk while a little standard leavening offers lift. make 10 {4-inch} pancakes

3/4 cup whole wheat flour
1/4 cup all purpose flour
2 Tbsp flax meal
1 Tbsp sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp kosher salt
1 1/2 cups whole buttermilk
1 egg, lightly beaten
Butter
1/2 cup frozen, fresh blueberries
Maple syrup

Preheat an electric griddle to 350 degrees. Whisk together the whole wheat flour & the next 6 ingredients in a medium bowl. Whisk together the buttermilk & the egg in a small bowl. Gently whisk the buttermilk mixture into the flour mixture until combined. Expect a few lumps & be certain not to over mix the batter or the pancakes will be a little tough. Rub a little butter on the hot griddle. Drop 1/4 cup of batter per pancake onto the surface. Cook 1 to 2 minutes or until bubbles begin to form over the surface. Flip the pancakes & cook an additional 30 to 45 seconds or until lightly browned. Repeat with the remaining batter being certain to butter the hot griddle again. Serve the pancakes with maple syrup & additional butter.

Pancakes may be cooked in advance, placed between small pieces of parchment paper & stored in zip top bags, then placed in the freezer up to one month. Just simply remove the number desired & rewarm them in the microwave until hot.
