Black Bean-Avocado Gorditas
Black Bean-Avocado Gorditas are made using a recipe of Refried Black Beans. They may be prepared quickly & used for many applications. Authentic Mexican gorditas are a masa based pastry that rely on a tortilla press in order to evenly flatten them. A good rule of thumb when choosing one is to first determine how much you plan to use it which will likely reveal a price point with which you’re comfortable. It needs to be strong so look for one labeled as heavy weight, heavy duty or heavy gauge. Cast iron will be strongest & avoid those made from aluminum or plastic while an enameled finish will aide in cleaning the device quickly. Black Bean-Avocado Gorditas
makes 4 servings
12 Classic Gorditas
Refried Black Beans
1/2 cup crumbled queso fresco
1 avocado, diced
1 Tbsp minced jalapeño
Split the Classic Gorditas in half horizontally using a serrated utility knife. Divide the Refried Black Beans between the Classic Gorditas. Top with the queso fresco, the avocado & the jalapeño.

How To Dice Avocados
Hass avocados, one of the most popular varieties, are grown in Mexico, Peru, Chile & California, weigh approximately 6 to 7 ounces & are a nutrient dense fruit loaded with vitamin K, vitamin C, potassium, folate & fiber. Avocados are easy to open & remove the flesh. Stabilize a cutting board with a damp kitchen towel underneath then gather a paring knife & a spoon.
The Technique
Carefully insert the paring knife into the top, center portion of the fruit resting the base on the cutting board. Run the knife lengthwise around the fruit using the seed as a guide ending where you began. Pick up the fruit & twist it open exposing the flesh. Carefully remove the seed with the tip of the paring knife pointing away from you. Slice the flesh lengthwise, then crosswise using the paring knife. The closer the cuts will result in a smaller dice. Insert a spoon between the skin & the flesh of each half loosening it all the way around. Remove the diced avocado with the spoon. Toss it in a bit of lime juice to prevent discoloration.
