makes 8 servings

2 lbs frozen chicken tenders
1/4 cup coarsely chopped red onion
1/4 cup packed, fresh cilantro leaves
1 1/4 cups low-fat Greek-style yogurt
3 Tbsp honey
1 Tbsp fresh lime juice
3/4 tsp kosher salt
1/4 tsp freshly ground pepper
3 grated hard boiled eggs
2 celery ribs, sliced
1/2 cup chopped, toasted pecans
mixed greens
8 {8-inch} flour tortillas

Bring the chicken w/ water to cover to a boil over medium-high heat.
Cook for 10 minutes or until no longer pink.
Drain & cool 10 minutes.

Pulse the onion & the cilantro in the food processor several times
or until coarsely chopped.
Add the chicken & pulse until coarsely shredded.

Stir together the yogurt, the honey, the lime juice, the salt & the pepper in a large bowl.
Fold in the chicken mixture, the eggs, the celery & the pecans just until combined.
Taste the mixture & adjust the seasonings, if desired.

Place a handful of mixed greens down the center of each tortilla.
Top w/ a helping of the chicken salad.
Roll up the tortilla & cut in half.

Wrap tortilla halves in parchment paper & tie w/ ribbon.
Nestle in mini colanders filled w/ colorful dish towels & pretty paper.
Add your favorite potato chips.

the chicken

i find chicken tenders to have a consistent texture so i prefer to use them
feel free to substitute your go-to

the tortillas

for easy rolling
microwave the tortillas for about 5 seconds on high power to slightly soften
this will prevent tearing when you roll these up

 the taste

regular Greek yogurt would be delicious & more decadent for sure
feel free to substitute if your wish

expect a lovely fresh taste w/ a slight twang
the honey adds a bit of sweetness
the pecans are the perfect nutty compliment
