makes about 8 servings

1 {2-oz} package slivered almonds
2 {12-oz} packages frozen broccoli florets, thawed & well drained
4 cups shredded, cooked chicken
2 {10.5-oz} cans cream of chicken soup
1 {8-oz} package shredded sharp cheddar cheese, divided
1 cup whole buttermilk
1/4 cup fresh lemon juice
1/4 cup chopped fresh parsley
1/4 tsp kosher salt
1/2 tsp freshly ground pepper
Garnish: fresh parsley

Toast the almonds in a 350 degree oven for 6 to 7 minutes.

Remove from the oven & pour onto a dinner plate to keep the nuts from toasting any further.

Portion the broccoli in a lightly greased deep-dish 13 x 9-inch casserole dish.
Top with the shredded chicken.

Whisk together the soup, 1 cup of the shredded cheese, the buttermilk,
the lemon juice, the parsley, the salt & the pepper in a large bowl.
Pour the mixture over the broccoli & the chicken in the dish,
spreading to the edges.

Bake at 350 degrees for 40 minutes.
Sprinkle with the remaining cheese & toasted almonds.

Return to the oven & bake an additional 10 to 15 minutes
or until the cheese melts & the center is hot & bubbly.

Sprinkle with fresh parsley before serving.

i added miss mary’s name to the recipe title to honor a family friend & fantastic home cook
her recipe inspired me to create this take on a southern classic

miss mary made her casserole with chicken breasts & fresh lemon
although my mother & grandmother both use the traditional sherry
in their recipes which are equally divine

feel free to try these options in place of the buttermilk to create your own version
mayonnaise * Greek yogurt * sour cream

the dish

literally
the baking vessel.

this is uber important
in order to serve a large crowd
you’ll need a good bit of volume going in

i do recommend a deep dish casserole
try the one i purchased

or

prepare in a 13 x 9-inch baking dish plus a 1 or 2 quart dish

the chicken

a rotisserie chicken will work well here
just know you’ll need two birds to prepare the recipe
expect approximately 2 cups of leftover chicken you can use in another recipe

or

reduce the broccoli by 1 bag & use all of the chicken if you so choose

the broccoli

thaw the broccoli in the refrigerator overnight
drain in a colander & pat well with paper towels to capture excess moisture

this is a super-important step that keeps the casserole
from becoming excessively watery on the back end

the sauce

expect a thick mixture to spread over the broccoli & the chicken
the buttermilk & lemon juice add fresh twang & brightens the soup-based sauce

sherry is a very traditional southern option to use if you’d like to
simply omit the lemon juice & substitute 3 Tbsp sherry instead

the salad

use my easy method for a custom created side dish
dress with oil & vinegar or your favorite bottled vinaigrette
