The batter yields a more fluid batter due to the extra ingredients folded in at the end of the blending process. The cakes bake a bit longer compared to the Cinnamon Pecan Crunch Coffee Cake even though the recipes use similar ingredients & techniques. Expect the tops of these cakes to bake more level & flat.

Cinnamon-Pecan Streusel
1 {8-oz} package cream cheese, softened
1/2 cup butter, softened
1 {16-oz} package dark brown sugar
3 eggs
1 tsp pure vanilla extract
3 cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp table salt
1 1/2 cups whole buttermilk
2 ripe, small bananas, diced
1 {8-oz} can crushed pineapple, undrained

Preheat the oven to 325 degrees. Generously grease & flour 2 {9-x 5-inch} loaf pans with a lip. Prepare the Cinnamon-Pecan Streusel as directed. Set aside.

Place the cream cheese, the butter & the brown sugar in the work bowl of an electric stand mixer. Attach the flat beater & blend the ingredients on Medium speed until light & airy. Stop the mixer occasionally & scrape down the sides of the bowl. Add the eggs & the vanilla. Blend the mixture on Low just until the yellow disappears. Whisk together the flour, the soda, cinnamon & salt in a small bowl. Add the flour mixture to the butter mixture alternately with the buttermilk & blend on Low speed just until combined. Fold in the bananas & the pineapple with a rubber spatula. Portion the batter between the loaf pans. Drop the pans a few inches from the counter top surface 3 times to settle the air bubbles. Sprinkle the streusel over the batter. Place the pans on a half sheet pan. Bake 1 hour & 25 minutes to 1 hour & 30 minutes or until a wooden pick tests clean in the center of the cakes. Cool in the pans 12 minutes. Remove the cakes from the pans & cool completely on a wire rack.

One of the most important factors when preparing cakes is to be certain ingredients are the proper temperature before beginning the recipe & that they are measured properly whether they will be used for the streusel or the cake batter. Remove the cream cheese, the butter, the eggs & the buttermilk from the refrigerator at least 20 minutes before beginning to ensure smooth & even mixing. Measure the ingredients for the cake batter ahead of time so they are ready to add to the other ingredients during the blending process in a timely manner.

Once the creaming process is complete, ring the work bowl using a rubber spatula to ensure all of the ingredients have been well blended. Add the eggs & the vanilla & blend the mixture once again on Low speed just until the yellow of the egg disappears. The Baking & The Cooling
