Honey-Sesame Slaw
Potato salad & slaw are always appropriate side dishes to offer with game day fan fare particularly when classic barbecue, kabobs or pork tenderloin is being served. Honey-Sesame Slaw is a versatile recipe that can be offered as is or enhanced with ramen noodles for that crunchy variation football fanatics just can’t seem to get enough of when tailgating socials are in order. It’s quick to prepare & when fresh ingredients are used, simply hard to resist. Be certain this game day must is reserved a spot on your weekly party menu for sure.
Honey-Sesame Slaw
makes 8 servings
Run The Option
If you love a ramen noodle slaw, stir in a crushed 3-ounce package just before tossing the ingredients with the dressing.
1 head cabbage, thinly sliced {about 1 1/2 lbs}
2 carrots, grated
1/2 cup coarsely chopped cilantro
5 scallions, sliced
1/3 cup coarsely chopped peanuts
1 1/2 tsp kosher salt, divided
1/3 cup fresh lime juice
3 Tbsp tahini paste or peanut butter
3 Tbsp Tupelo honey
1 Tbsp vegetable or toasted sesame oil
Freshly ground pepper & sesame seeds
Combine the cabbage, the carrots, the cilantro, the scallions, the peanuts & 1 teaspoon salt in a large bowl. Whisk together the remaining salt, the lime juice, the tahini paste, the honey & the oil. Pour the dressing over the cabbage mixture & toss well to combine. Season with freshly ground pepper & top with sesame seeds, if desired.

How To Trim Scallions
Although scallions are available in your local market year round, they are typically planted when the ground is cool. As the soil begins to warm, the scallions begin to take shape in the garden & are ready for a spring harvest. If a milder flavor is desired in recipe applications, choose younger, smaller bulb groupings.
The Technique
Expect the white portion to have a sharper flavor so many times recipes may call to omit it for a more balanced flavor as is the case of Scallion Vinaigrette. Trim scallions before using them in recipe applications by cutting the tips & the ends away, then thinly cut them. When I worked in the restaurants, several chefs used razor blades to slice them with precision into a collection of shaved green onions. Although certainly not necessary in this case, I find that a freshly sharpened paring knife yields a cleaner, neater result as opposed to a chef knife.
