Banana Bread Waffles
The key to making this waffle lies in how you blend the eggs into the batter. Beating the egg whites & folding them in at the end provides the structure needed to ensure an extra crisp exterior. Banana Bread Waffles
makes 10 servings
1 cup very ripe mashed banana
1 cup whole buttermilk
6 Tbsp vegetable oil
2 large eggs, separated
1 tsp vanilla extract
1 1/4 cup all purpose flour
1/2 cup cornstarch
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp table salt
2 Tbsp sugar
1/2 cup chopped toasted pecans
Maple syrup & melted butter
Preheat the waffle maker. Whisk together the bananas, the buttermilk, the oil, the egg yolks & the vanilla in a medium bowl. Whisk together the flour, the cornstarch, the baking powder, the soda & the salt in a large bowl. Beat the egg whites with a hand-held electric mixer until soft stiff peaks form. Gradually add the sugar & beat on High speed until stiff peaks form. Stir the banana mixture into flour mixture just until blended. Fold in the beaten egg white mixture. Portion 1/3 cup of batter onto a hot, lightly greased waffle iron. Gently spread to the edges with a small offset spatula. Sprinkle with some of the pecans & close the lid. Cook 3 to 4 minutes or until steam subsides. Remove from the iron & keep warm in a 200 degree oven on a rack over a sheet pan. Repeat with the remaining batter & pecans. Serve with maple syrup, melted butter & additional toasted pecans.

Beat the eggs with a hand mixer & just when soft peaks begin to form, slowly add the sugar.

The Procedure
The Waffle Iron
Start by plugging in the waffle iron & preheating it while you blend the ingredients together so that it is steamy hot when ready to cook them. Follow individual manufacturers instructions for specific questions you may have in regards to certain features as they are all a little different.
The Blending
