Homemade Salsa
Salsa. It’s that addictive blend of fresh flavors no-one can seem to keep the chips away from. The good news is that you can prepare a really great batch from average tomatoes making it ideal to serve year round. It’s what you add to it that makes it something to relish at a variety of functions from game day gatherings to a Taco Tuesday weeknight meal. Fresh cilantro, garlic, sweet onion & lime juice are the key ingredients to this fiesta favorite so don’t take any shortcuts plus the food processor takes care of all of the prep work for you. Follow my tips on how to gage the heat of jalapeños to guide you in making a batch that your football fanatics will love. Once you make Homemade Salsa, you’ll never buy a jar again.
Homemade Salsa
makes 12 servings
Game Changer
Substitute chipotle peppers in adobo sauce in place of the jalapeño for a smokier variation.
A handful of cilantro leaves
1 large garlic clove, quartered
1/4 of a medium sweet onion, quartered
1/2 of a fresh jalapeno, quartered
4 lbs plum tomatoes, quartered
1 Tbsp kosher salt
Freshly ground pepper
The juice from 1 1/2 limes
Pulse the first 4 ingredients in a food processor. Scrape down the bowl sides with a rubber spatula. Add the tomatoes & process until well blended. Pour the salsa into a large bowl. Stir in the salt, the pepper & the lime juice. Taste & adjust the seasonings taking into consideration the salt level of the tortilla chips.
The Extra Point
Accompany with grilled steak or chicken for added flavor at suppertime.

Most of the heat from jalapeños come from the seeds & membrane.
Follow these tips to add just the right amount.
The Pointers
Mild
Remove the seeds & the membrane.
Moderate
Remove half of the seeds & add the membrane.
Medium
Add all of the seeds & add the membrane.
Hot
Add the entire jalapeño.
