makes 6 servings

1 cup uncooked quinoa
1/3 cup fresh lemon juice
3 Tbsp olive oil
2 garlic cloves, pressed
1 tsp kosher salt
2 {15.5-oz} cans chick peas, rinsed & drained
1 pint of grape tomatoes, cut in half
2/3 cup diced & seeded cucumber
1/2 cup finely diced red onion
1/4 cup chopped parsley
1 {4-oz} package crumbled feta

one
cook the quinoa according to package instructions
season w/ a pinch of kosher salt
let cool 30 minutes

two
whisk together the lemon juice, oil, garlic & salt in a large bowl
stir in the chick peas, tomatoes, cucumber, red onion & parsley
fold in the cooled quinoa & feta

three
season liberally w/ freshly ground pepper
add a smidgen of salt if you need to

allow the quinoa to stand a bit after cooking to cool down
before tossing w/ the other ingredients
this will keep the herbs bright & the the cheese from clumping

you can serve this at room temperature or chilled

adjust the flavors if you chill the salad
drizzle additional lemon juice over the dish to loosen it up a little
sprinkle w/ additional salt & pepper if you’d like to

as always
add more or less of any ingredient to suit your taste

have several lemons on hand to make flavor adjustments
