makes 2 dozen

12 jalapeno peppers
1/2 {8-oz} package cream cheese, softened
1 cup shredded Cheddar cheese
1/2 cup Homestyle Taco Beef, cooled
2 garlic cloves, pressed
1 scallion, sliced
1/2 cup crushed corn chips

cilantro * scallions * salsa * lime wedges

Preheat the oven to 400 degrees.

Using disposable rubber gloves, cut the jalapenos in half.
Remove the seeds & the membrane.
Cut a super-thin strip away from the bottom of each pepper half
using a paring knife & discard.
Place the peppers on a lightly greased foil-lined half sheet pan.

cutting a thin piece from the bottom will keep them from wobbling around the pan

Combine the cream cheese, the Cheddar, the beef, the garlic & the scallion.
Fill a disposable piping bag w/ the mixture & pipe into the peppers.
Do not over fill.

Top w/ the crushed chips, pressing to the filling to adhere.

Bake for 15 to 17 minutes or until bubbly hot.
Serve w/ the extras.

makes 3 1/2 cups

1 1/4 lbs 80% lean ground beef, cooked & drained
2 Tbsp chili powder
2 tsp cumin
1 tsp kosher salt
1/4 tsp ground black pepper
1/4 tsp chipotle chili powder
1 {14.5-oz} can diced tomatoes, undrained
1/4 cup water
1 Tbsp chopped fresh cilantro

Place the cooked beef in a large non-stick skillet over medium-high heat.
Add the chili powder, the cumin, the salt, the pepper & the chipotle chili powder.
Cook for 1 1/2 minutes & stir the mixture on occasion.
Add the tomatoes & the water.

Bring the mixture to a boil & simmer, stirring occasionally 5 minutes
or until about 1 Tbsp of liquid remains.
Sprinkle w/ the cilantro.

Note: You can substitute leftover taco seasoned beef you may have on hand.

Easy Loaded Nachos

Portion tortilla chips in a single layer on a lightly greased half sheet pan.
Top the chips with shredded Cheddar & broil a few minutes, until good & melty.
Top with the remaining warm Homestyle Taco Beef, sour cream,
avocado, scallions & salsa for a touchdown appetizer football fanatics will love.

Combine 1 1/2 cups Jose Quervo tequila, 1 cup Grand Marnier, 4 cups sweet tea,
2 cups limeade with orange & lime wedges in a large pitcher.
Serve over ice.
