Cinco de Mayo marks a major battle victory in Puebla during the Franco-American War. It was a turning point for the more novice & outnumbered Mexican army strengthening the resistance against the French. The holiday is actually more popular in the United States where we gather to salute Mexican culture by having a few friends over for a celebration featuring some of our favorite food flavors such as nachos, tacos & margaritas.

makes 6 to 8 servings

2 lbs ground chicken
1 cup fresh bread crumbs, packed
3 large garlic cloves, pressed
1 jalapeno, minced
1/4 cup tequila
1 tsp lime zest
2 Tbsp fresh lime juice
1 1/2 tsp kosher salt
Vegetable oil
16 slider buns
Cilantro-Lime Mayo * Smashed Avocado

Combine the first 8 ingredients in a large bowl.
Shape into 16 patties. Place on a parchment paper-lined sheet pan & cover.
Chill for 30 minutes.

Dab a bit of oil over the bottom of a 10-inch cast iron skillet & heat over Medium-High.
Add 4 patties to the hot skillet & reduce the heat to Medium-Low.
Cover the skillet with a lid.

Cook 4 minutes per side or until a thermometer registers 165 degrees.
Repeat with the remaining patties,
dabbing oil over the skillet surface between batches & keeping the heat on Medium-Low.

Fill the buns with the burgers.
Top with the Smashed Avocado & the Cilantro-Lime Mayo.
Serve with Homemade Salsa & tortilla chips.

Grilling Instructions
Grill the patties over Medium-High heat {350 to 400 degrees}
4 minutes per side or until a thermometer registers 165 degrees.

1/2 cup mayo
1 Tbsp fresh lime juice
1 Tbsp chopped fresh cilantro
A pinch of kosher salt

Combine all of the ingredients in a small bowl.

1 large garlic clove, quartered
1/4 of a medium yellow onion, quartered
1/2 of a fresh jalapeno, quartered
4 lbs plum tomatoes, quartered
2 to 3 tsp kosher salt
Freshly ground black pepper
The juice from 1 1/2 limes
Tortilla chips

Pulse the first 4 ingredients in a food processor.
Add the tomatoes & process until well blended.
Blend in batches, if necessary.

Pour the salsa into a large bowl. Stir in the salt, the pepper & the lime juice.
Taste & adjust the seasonings… consider the salt level of the tortilla chips.
