A fresh from the oven batch of Bourbon-Molasses Oatmeal Cookies offer undeniable good taste with a chewy texture that can’t be beat plus it’s filled with the iconic game day spirit that will lead one team to the sweet victory it deserves. Coupled with rich, bold molasses, you can’t go wrong when served at your tailgating social. Whether you choose to eat dessert first or save room to clench the MVP with a tall glass of milk, it’s a win-win for all.

The Basic Fundamentals

The key to success is to begin the mixing process whether with butter that is the proper consistency. It shouldn’t be too firm nor too soft. You should be able to create a rudimentary butter curl with a spoon indicating that it is indeed ready to use.

1 cup butter, softened
1 1/2 cups packed dark brown sugar
2 Tbsp bourbon
2 Tbsp molasses
1 egg
1 1/2 cups all-purpose flour
1 1/2 tsp cinnamon
1 tsp baking soda
3/4 tsp kosher salt
2 cups old fashioned oats
1 cup sweetened flaked coconut
1 cup toasted chopped walnuts

Preheat the oven to 375 degrees. Beat the butter & the brown sugar on medium speed with an electric stand mixer until light & airy. Scrape down the sides of the bowl as needed. Add the bourbon & the molasses, beating until blended. Add the egg & beat until combined. Whisk together the flour, the cinnamon, the soda & the salt in a large bowl. Stir in the oats, the coconut & nuts, tossing until coated with the flour mixture. Add to the butter mixture & mix just until combined. Roll 2 level tablespoons of dough into a ball & place 2-inches apart on parchment paper-lined cookie sheets, flattening the dough with your fingers. Bake, in batches, 9 to 11 minutes.

Substitute pecans in place of the walnuts for an equally delicious variation.
