The Game Plan

Game Changer

Migas are a traditional early morning Mexican skillet dish prepared with fried corn tortillas & eggs. Extra spicy nacho cheese tortilla chips make an appearance in this game day version designed to tackle hearty appetites. The seasoning on the chips provide a flavorful kick without the need to pull out additional spices from the cupboard.

2 tsp vegetable oil
1/2 small sweet onion, diced
2 garlic cloves, pressed
8 eggs, lightly beaten
3 Tbsp water
1/2 tsp kosher salt
4 slices bacon, cooked & crumbled
1 cup coarsely crushed spicy nacho cheese flavored tortilla chips
2 Tbsp chopped fresh cilantro
Fresh lime juice
1 {9.2-oz} package {8-count} flour tortillas 
Toppings: Diced tomato, grilled corn kernels, queso fresco & Homemade Salsa

Salute the onion in hot oil in a large non-stick skillet over Medium heat 5 minutes or until softened. Add the garlic & cook 1 additional minute. Whisk together the eggs, the water & the salt in a large bowl. Turn down the heat to Medium-Low & pour the egg mixture into the skillet. Slowly draw a silicon rubber spatula through the eggs while cooking until almost set, about 5 minutes. Sprinkle the eggs with the bacon, the chips & the cilantro, folding though the mixture until coated. Squeeze a smidgen of lime juice over the eggs. Divide the egg mixture between the flour tortillas & sprinkle with the desired toppings. Roll up the tortillas & secure with wooden picks or decorate with Gridiron Sandwich Wraps

Charred corn tortillas can be used to roll up the burritos for an equally tasty variation, if desired.

Using a blend of fresh & frozen corn kernels delivers intense flavor while shaving prep time off the clock. Expect the dip to be full of saucy flavor. Give it a good stir every now & then during the party for an instant pep rally.

2 ears fresh corn on the cob, shucked
1 cup crumbled queso fresco
1/2 cup sour cream
3 Tbsp fresh lime juice
1 Tbsp minced jalapeno
1 clove garlic, pressed
1 1/4 tsp chili powder
1 tsp kosher salt
1 {15-oz} bag frozen corn, thawed
1/4 cup diced red onion
1/4 cup chopped fresh cilantro
Garnishes: Freshly ground pepper, chili powder & queso fresco
Tortilla or corn chips

Grill the corn over direct Medium-High heat {350 to 400 degrees} 10 minutes, turning often, until charred. Cool 30 minutes. Cut the kernels from the cobs. Stir together the queso fresco & the next 6 ingredients in a bowl. Fold in the thawed corn, the onion & the cilantro. Transfer to a serving bowl. Garnish, if desired. Serve with chips.

Try the dip over lunch salads with grilled chicken, tomatoes & crushed tortilla chips. The dip can also be served over Taco Tuesday delights.

The Basic Fundamentals

Down. The. Hatch. Auburn fans can revel in a glass of this classic game day cocktail with a twist that can be prepared with a Mississippi state original, Cat Head Vodka, giving new meaning to taking down the the Ole Miss Rebel competition.

1 {64-oz} bottle vegetable juice, chilled
1 cup vodka or tequila
1/2 cup fresh lime juice
3 Tbsp Worcestershire sauce
2 tsp dark brown sugar
2 tsp chili powder 
1 1/2 tsp kosher salt
1 tsp ground cumin
2 jalapeños, thinly sliced
Garnishes: Lime slices & jalapeños 

Combine the first 9 ingredients in a large pitcher. Serve over ice. Garnish, if desired.

Alabama vs Texas A&M

One of the more memorable but devastating matchups to Alabama Crimson Tide fans was an upset against the Texas A&M Aggies in 2012 with Johnny Manziel leading the quarterback position. The final score in Tuscaloosa’s Bryant-Denny stadium, 29-24. The two teams have only played against one another 9 times but there are several cross overs between the schools. Bear Bryant coached a young Gene Stallings at Texas A&M. Both would eventually take the lead post for the Crimson Tide years later & both would win Championships for Alabama. The Aggies led by Coach Kevin Sumlin will face-off at Kyle Field in College Station, Texas on Saturday against Nick Saban’s Alabama Crimson Tide with a 6:15 pm kickoff on ESPN.

Auburn vs Ole Miss

Saturday will mark the 40th meeting between the Auburn Tigers & the Ole Miss Rebels with the tigers leading the series at 29-10. The Auburn Tigers led by Gus Malzahn & the Ole Miss Rebels led by interim Coach Matt Luke will go head-to-head in Jordan-Hare Stadium on Saturday with an 11am kick-off on the SEC Network.
