Tis’ the season to give thanks & tackle big appetites with a menu of tailgating fan fare that’s a cinch to pull off. Game Changer

Football fanatics are sure to tackle a platter of these hearty bites quickly. Try a variety of delectable cheeses such as Havarti, Gouda or a spicy Pepper Jack for an equally tasty appetizer. 

Smokin’ Cranberry-Orange Relish
1 {16-oz} package {12-count} sweet dinner rolls, split
2 Tbsp coarse grain mustard
6 Swiss cheese slices, quartered
6 cooked & crumbled bacon slices
3/4 lb thinly sliced deli-style smoked turkey
2 Tbsp melted butter
1 tsp honey
1/2 tsp poppy seeds

Prepare the Smokin’ Cranberry-Orange Relish as directed. Cover & chill. Preheat the oven to 350 degrees. Spread the bottom of the rolls with the mustard. Place the roll bottoms on a foil-lined half sheet pan or in a 13 x 9-inch baking pan. Layer the rolls with half of the cheese, the bacon, the turkey & the remaining cheese; add the roll tops. Stir together the butter & the honey. Brush the mixture over the roll tops & sprinkle with the poppy seeds. Bake 20 to 25 minutes or until the tops are golden & crisp. Serve with the relish.

Try the recipe with ham or shredded chicken for equally tasty results.

Trick Play

The cranberries add a lovely tart flavor to this seasonal shortcut fruit spread. The bourbon, a kick.

2/3 cup orange marmalade
1/2 cup fresh cranberries
 1/4 cup bourbon
2 tsp minced chipotle peppers in adobo sauce

Bring all of the ingredients to a boil in a small saucepan over Medium heat. Cook 5 to 6 minutes, stirring occasionally, until the cranberries pop & the mixture slightly thickens. Transfer the mixture to a small bowl. It will thicken further upon cooling. Chill 1 hour. Use as directed.

Spread over hot-from-the-oven biscuits or serve with pork tenderloin.

The Basic Fundamentals

These will go fast & the recipe easily doubles. Prepare as directed & bake two pans at one time.

36 pretzel crackers
9 bacon slices, cut into 4 pieces
1 Tbsp honey
3 Tbsp finely chopped unsalted, roasted peanuts
Freshly ground pepper & crushed red pepper flakes

Preheat the oven to 250 degrees. Wrap each cracker with bacon & place seam side down on a lightly greased rack over a foil-lined half sheet pan. Brush the honey over the bacon & sprinkle with the peanuts pressing lightly to adhere. Sprinkle with freshly ground pepper & crushed red pepper flakes, if desired. Bake 1 1/2 hours or until the bacon is crisp. Cool completely.
