Fry the chicken up to one day ahead of time.
Pack in plastic containers for traveling or warm the chicken before serving.
Place it on a rack over a half sheet pan & heat in a 300 degree oven 8 to 10 minutes.

The biscuits may be prepared & baked up to a day ahead of time.
Conversely, portion the dough on lightly greased baking sheets & freeze them.
Place in zip top plastic bags & store up to 3 weeks.
Portion & bake as directed adding a few additional minutes in the oven, if necessary.

Stir together the Bourbon Spiked Ginger-Peach Hot Pepper Jam up to two days ahead. 
Portion for packing or transfer to a ramekin & accompany with an heirloom silver spoon.

makes 8 to 10 servings

The Basic Fundamentals

To keep the outer portion of the fried chicken looking it’s best, handle with care. Remove the drumsticks from the oil using tongs & pick up each piece by the smaller leg portion. Allow it to cool, then place in a paper towel-lined carrier for easy transporting to tailgating spaces. 

1 cup Creole mustard
2 Tbsp minced sweet onion
6 garlic cloves, pressed
4 lbs chicken drumsticks
2 1/4 cups all purpose flour
2 tsp kosher salt
2 tsp freshly ground black pepper
1 tsp ground red pepper
1/2 tsp dried thyme
Vegetable oil

Combine the first 3 ingredients in a large bowl; coat the chicken pieces with the mixture. Chill 1 hour. Whisk together the flour, the salt, the black pepper, the ground red pepper & the thyme in a medium bowl. Pour the oil halfway up the sides of a Dutch oven & heat to 325 degrees. Dredge the chicken pieces in the flour mixture. 

Fry the drumsticks, in batches, 10 to 12 minutes, turning halfway through the cooking time or until a thermometer registers 180 degrees. Allow the temperature to return to 325 degrees between batches. Let stand on a wire rack over paper towels. Keep the chicken warm in a 200 degree oven up to 45 minutes. 

The Extra Point

Do not allow the oil to become too hot. If the chicken browns too quickly, remove it from the grease & place on a wire rack over a half sheet pan. Place in a 300 degree oven & bake 5 to 10 minutes or until the chicken registers the proper temperature. Look to The Tailgaters Essential Frying Guide for additional pointers.

Bourbon Spiked Ginger-Peach Hot Pepper Jam
makes about 1 1/4 cups

Run The Option

The jam may be served directly from the jar over the biscuits instead of preparing the bourbon variation. Conversely, your favorite pepper jelly would work just fine as well.

1 cup Ginger-Peach Hot Pepper Jam
6 Tbsp bourbon
1/4 cup water

Combine all of the ingredients in a small saucepan. Bring to a boil & cook 1 minute or until slightly thickened. Remove from the heat. Use as directed. 

The Extra Point

Drizzle this combination over grilled chicken & pork for equally tasty results.

makes about 2 1/2 dozen

The Basic Fundamentals 

Pierce the sweet potato several times with a fork, place on a foil-lined half sheet pan & bake at 400 degrees 1 hour & 15 minutes or until the potatoes are soft when lightly pressed. 

2 cups all purpose flour
2 Tbsp dark brown sugar
1 Tbsp baking powder
1 tsp kosher salt
1/2 cup cold butter, cut into small cubes
2/3 cups whole milk
2/3 cups mashed sweet potato {about an 8-oz potato, baked}
Melted butter

Preheat the oven to 500 degrees. Whisk together the flour, the brown sugar, the baking powder & the salt in a large bowl. Cut the butter into the flour mixture with a pastry blender until it resembles the size of small peas. Stir together the sweet potato & the milk; fold into the flour mixture just until a sticky dough comes together.

Turn the dough out onto a heavily floured surface & knead 2 to 3 times. Pat the dough to 1/2-inch thickness & portion with a 1 5/8-inch round cutter. Place on a lightly greased half sheet pan 1/4-inch apart. Reroll the dough & repeat. Place in the oven, & reduce the temperature to 400 degrees. Bake on the middle oven rack 18 to 20 minutes or until lightly browned. Brush with melted butter.

Simple bacon, eggs & grits make a delicious accompaniment to the biscuits for Sunday brunch.

Alabama vs Ole Miss

One of the most classic matchups between Alabama & Ole Miss was in 1969. The Crimson Tide defeated the Landsharks with a 33-32 victory led by a crushed Ole Miss quarterback, Archie Manning during the first nationally televised prime time game. The contest took place the same season teams from across the country commemorated & celebrated the 100th anniversary of college football. Ole Miss hosts Alabama in Vaught-Hemingway Stadium on Saturday with a kick-off scheduled for 6 pm cst on ESPN.

Auburn vs LSU

When Auburn & LSU met in Jordan-Hare stadium in 2010 both teams were undefeated. The game became edge of your seat good in the fourth quarter when it was tied up with Cam Newton leading the charge. Auburn went on to clench the win with a final score of 24-17. Auburn hosts LSU in Jordan-Hare Stadium with a 2:30 pm cst kickoff on CBS.
