makes 32 bars

Run The Option

The bars can be prepared in a more traditional manner by substituting graham cracker crumbs in place of the pretzel crumbs. Expect a sweeter bite.

1/2 cup butter
1 cup creamy peanut butter
1 3/4 cup powdered sugar
3/4 cups finely crushed pretzel crumbs
1/2 cup bittersweet chocolate morsels
1/2 cup peanut butter morsels
11 Tbsp powdered sugar
1 tsp meringue powder
1 Tbsp hot water

Line an 8-inch square pan with wax paper. Allow 2 inches to hang over the sides. Lightly grease with cooking spray. Melt the butter over Low heat in a 3-quart saucepan. Remove from the heat. Whisk in the peanut butter & 1 3/4 cup powdered sugar. The mixture will not be completely smooth. Stir in the pretzel crumbs. Spread the mixture in the prepared pan. Melt the chocolate & the peanut butter morsels in a microwave-safe bowl on High for 30 seconds. Whisk the mixture until smooth & pour over the peanut butter mixture in the pan. Spread over the surface with an off-set spatula. Let stand 2 hours or until firm. Cut into bars.

Whisk together the remaining 11 Tbsp powdered sugar, the meringue powder & the water in a small bowl. Fill a pastry bag fit with a No. 1 tip. Pipe lines over the top of each bar to resemble football laces. Allow to dry. Store at room temperature or in the refrigerator. 

The Extra Point

If traveling, package the treats in a single layer & be certain the line up in the container is snug. This will keep the design looking fresh & prevent the bars from moving during transport.

Purchase disposable piping bags from craft stores.

Cut the end from the bag & place a small plain tip into the bottom.
Several sizes will work well from a no. 1 to a no. 4.

Fill with the royal icing & twist the end closed.
Pipe lines over the surface of the bars to resemble football laces.
Allow the icing to set before serving.
