Tequeños are a fairly common Venezuelan street food. The snack is typically made by preparing a simple homemade sweet dough that is wrapped around a mild cheese such as queso fresco. The tequeños are then deep fried & served piping hot. Inspired by that very notion, Pepperoni Tequeños take a few shortcuts to become the perfect tailgating appetizer if you’re planning to have a few friends over to watch the game on TV. Egg roll wrappers which can be found in the produce case are topped with Parmesan, mozzarella & pepperoni slices then rolled up tightly before deep frying. Serve them with spicy marinara sauce for a tangy finish. The tequeños can be wrapped ahead of time & fried when you please. Pepperoni Tequeños
makes 1 dozen

Run The Option

Experiment with a variety of cheeses to change the flavor of the appetizer.

12 egg roll wrappers
1 egg, lightly beaten
1/2 cup finely grated Parmesan cheese
1 {3.5-oz} package pepperoni slices
1 {12-oz} package mozzarella cheese sticks
Vegetable oil
3/4 cup marinara sauce
1 Tbsp chopped fresh basil
Crushed red pepper flakes, grated Parmesan cheese & basil

 Brush the egg roll wrappers with the beaten egg. Sprinkle with a little of the Parmesan cheese. Place 4 pieces of pepperoni in the center of each wrapper on the diagonal; tops with a mozzarella cheese stick. Fold the outer corners of the wrapper over the ends of the cheese stick; fold one side of the remaining egg roll wrapper to the center over the cheese stick. Roll to the opposite side & press the corner tightly to seal.

Pour the oil to a depth of 1 1/2 inches in a 3 1/2-quart saucepan & heat to 350 degrees. Attach a candy thermometer to the side of the pan to monitor the temperature. Fry the tequeños, in batches, 3 to 4 minutes or until golden brown. Allow the temperature to return to 350 degrees between batches. Let stand on a wire rack over paper towels. Stir together the marinara sauce & the basil. Garnish, if desired.

The Extra Point

Serve the pizza sticks with a house salad of mixed greens, black olives, pepperoncinis, tomatoes, cucumber & Italian-style vinaigrette for a tasty dinner.

The Egg Wash

Brushing a beaten egg over the entire surface of the egg roll wrapper will ensure the tequeños remain sealed during frying. It also keeps the Parmesan cheese nice & snug.

The Rolling

Once the Parmesan cheese & the pepperoni slices have been centered over the egg roll wrapper, top with a mozzarella cheese stick. Tuck two of the corners over the end of the cheese. Fold one of the remaining corners completely over the cheese towards the last corner to encase it & begin rolling up the tequeños until tightly sealed. Brush additional egg under the corner, if necessary, to ensure a good seal.

The Sealed Tequeños

The tequeños can now be fried according to recipe instructions or held covered in the refrigerator for several hours before adding them to the hot grease.

The Frying 

Always be cautious when frying items. Attach a candy thermometer to the side of the pot to make certain the oil temperature is correct & remains constant during the procedure. Once the snack has been fried, be certain to drain them well over paper towels for the best flavor.
