makes 1 1/4 cup

Game Changer

Pecans from an Auburn neighbor, Lee County, add a smidgen of local flavor to this classic Louisiana sauce. 

1 scallion, cut into pieces
1 garlic clove, cut into pieces
A handful of fresh parsley leaves
1 cup mayonnaise
1/3 cup toasted pecan halves
2 Tbsp Creole mustard
1 Tbsp fresh lemon juice
1 tsp paprika
1/4 tsp ground red pepper
Freshly ground pepper

Pulse the first 3 ingredients in a food processor 5 to 6 times on Low until finely chopped. Scrape down the sides of the bowl. Add the mayonnaise, the pecans, the mustard, the lemon juice, the paprika & the ground red pepper. Pulse on High until smooth, about 20 seconds. Season with pepper. Use as directed.

Arrange 1 cup pecan halves on an ungreased baking sheet. Bake at 350 degrees for 6 to 8 minutes or until fragrant. Cool completely. Use as directed in recipe preparation.
