Chicken Shack
Perch a bird atop a Budweiser can of beer, smoke over some fiery hot coals & you have created some of the easiest & crowd pleasing tailgating morsels. Take the concept one step further & really blow everyone away with a recipe for Honey-Bourbon Beer Can Chicken. A traditional blend of herbs & spices seasons the meat beautifully & a quick glaze that’s added just before removing from the grill takes it over the goal line to score big with football fanatics. Serve with Crimson Cranberry ‘Cue Sauce for an extra bold kick. Follow my pointers & get ready to make Beer Can Chicken 2.0 at your next tailgating social.
Honey-Bourbon Beer Can Chicken
makes 6 servings
The Basic Fundamentals
Any variety of beer or soda will work just fine for the recipe.
2 Tbsp dark brown sugar
1 Tbsp kosher salt
1 tsp poultry seasoning
1/2 tsp dried thyme leaves
1/2 tsp crushed red pepper flakes
1/4 tsp garlic powder
1/4 tsp freshly ground pepper
1 {4-lb} whole chicken
1 Tbsp vegetable oil
1/2 {12-oz} can beer
Honey-Bourbon Glaze
Soak the wood chips in water for 30 minutes. Drain. Place the chips in heavy-duty foil & make a packet. Poke a few holes in the foil. Set aside. Stir together the first 7 ingredients in a small bowl. Set aside. Remove the giblets & neck from the chicken cavity, if necessary. Rub the oil over the surface of the bird. Sprinkle the brown sugar mixture over the chicken. Build a fire with charcoal. Add the packet of wood chips to the grill or smoker. Position the chicken over the beer can & place directly on the grate over indirect heat, about 225 to 275 degrees. Cook 1 hour & 15 minutes or until an internal temperature registers 180 degrees. Brush the chicken with the Honey-Bourbon Glaze & cook, covered, an additional 10 minutes. Let stand 10 minutes. Slice & serve.
The Extra Point
The chicken makes a wonderful weeknight meal. Pull the meat form the bone & prepare quesadillas, soups & melty-good paninis.
Honey-Bourbon Glaze
makes about 1/3 cup
The Basic Fundamentals
Invest in a good quality brush that can be used for basting sauces for all of your grilling applications.
3 Tbsp honey
1 Tbsp bourbon
1 Tbsp Dijon mustard
1 tsp fresh lemon juice
Stir together all of the ingredients. Use as directed.
The Extra Point
Baste over chicken drumsticks or smoked hot wings for delicious added flavor.

The Technique
No. 1
The Seasonings…Etc
A classic blend of herbs & spices that I love to use for roasting a chicken in the oven serves as the perfect back drop for this recipe. A well balanced mix of sweet, salty & spicy heat deliver on big flavor. Try the combination for simple grilling applications, too. It’s equally tasty over chicken tenderloins & drumsticks.
Brush the oil over the skin as it will help the spices adhere to the bird. You’ll also enjoy the crispy notes once it’s ready to eat.
No. 2
The Smoking
Get the grill or smoker ready. Look to The Tailgaters Quick Reference BBQ Guide for additional tips. Once the fire is ready, simple place the chicken over the 1/2 full can of beer & position the bird over indirect heat onto the grill grate. Be very careful & allow the chicken legs to help prop the bird upright– tuck them between the grill grates, if necessary, to ensure balance.
No. 3
The Glaze
Brush the Honey-Bourbon Glaze over the entire surface of the chicken once it registers 180 degrees. Place the lid back over the bird & allow the glaze to set. You can then remove it from the grill & allow the bird to stand about 10 minutes before slicing & serving.
