The Basic Fundamentals

Butter may be left on the countertop to soften for approximately 20 minutes. Use your index finger to press the surface. If an indentation remains, it’s ready to use in a variety of recipe applications. 

1/2 cup butter, softened
1 cup dark brown sugar
1 egg
1 tsp vanilla extract
1 cup creamy peanut butter
1 1/4 cup all purpose flour
1/2 tsp baking soda
1/4 tsp kosher salt

Cream the butter & the sugar on Medium speed using an electric stand mixer until light & fluffy. Add the egg & the vanilla. Blend just until combined. Add the peanut butter & mix just until blended. Do not over mix the peanut butter as it may separate. Whisk together the flour, the baking soda & the salt in a small bowl. Add to the butter mixture & blend on Low speed just until combined. Transfer the dough to a bowl & cover with plastic wrap. Chill 4 hours. Divide the dough into 4 equal pieces & roll each portion into a 10-inch log that measures approximately 1-inch in diameter. Roll in plastic & chill 4 to 24 hours.

Preheat the oven to 350 degrees. Slice each log into 1/4-inch thick pieces using a paring knife. Place 1-inch apart on parchment paper-lined half sheet pans. The dough will spread during baking. Imprint a cross hatch pattern over the dough surface using the tines of a fork. Bake 9 to 10 minutes. Cool completely. 

The Extra Point

The dough is extremely soft. Place the logs in the freezer briefly during the cutting process to reform again.

When preparing baking recipes that call for brown sugar, it’s important to get an accurate measurement. Be certain to pack it tightly in the measuring cup & level with a knife, if necessary. Once you have the proper amount, add it as is to the recipes or crumble through your fingers to break it up to ensure the proper blending takes place.
