Horse With No Name

It wouldn’t be a game day without an array of tantalizing sauces for fan-favorite dipping. Chicken fingers, assorted vegetables, sliders, sandwich roll ups & fried cheese sticks beckon a special concoction that speaks directly to what they have to offer. In the case of grilled specialties, many times a simple Classic Horseradish Sauce is all that’s needed to send these smoky flavors into the zone & three common ingredients delivers the good taste. Be sure to accompany with Bourbon-Bacon Pork Tenderloin for rave reviews from football fanatics.

How To Zest Fresh Citrus

A little lime zest is a wonderful way to add fresh notes to sauces.
Pep up a variety of your favorite foods with this easy technique.

The Technique

Hold the microplane grater over a cutting board, allowing the tip to rest over the surface at an angle. Swipe just the outer portion of the citrus over the tool towards the board. Turn the fruit after each swipe. You only want to collect zest with color & not the white, bitter pith just underneath the surface. Repeat the process until you have collected the amount you’d like to add to the recipe.
