You can guarantee a line up near the grill on game day if steak is on the menu & when bold Texas flavors come into play, you’ve scored a real winner. Southwestern Flank Steak is seasoned to perfection by using a blend of pantry stapes to deliver the goods but a trick play of coating the steak with a bit of diced Vidalia onion & fresh garlic is the secret to this irresistible tailgating food. Follow my pointers & get ready to grill the competition under.

Southwestern Flank Steak
makes 6 to 8 servings

The Basic Fundamentals

Allow the beef to stand at room temperature for 20 minutes before grilling for the most accurate interior cook time.

2 Tbsp chili powder
1 Tbsp dark brown sugar
1 1/2 tsp cumin
1 1/2 tsp kosher salt
1/2 tsp crushed red pepper
2 garlic cloves, pressed
3 Tbsp olive oil
1/2 of a small Vidalia onion, minced
1 1/2 lbs flank steak
 Lime wedges

Combine the first 7 ingredients in a small bowl. Stir in the minced onions to form a paste. The mixture will be very thick. Coat both sides of the flank steak with the seasoning. Cover & refrigerate 1 to 24 hours.

Preheat the grill to Medium-High {350 to 400 degrees}. Let the steak stand 20 minutes at room temperature. Grill the steak 3 to 4 minutes per side. Remove the steak from the grill & let stand 10 minutes before slicing. Serve with lime wedges.

The Grilling

Anywhere from 3 to 4 minutes per side will deliver a juicy & tender steak averaging about a 3/4-inch thickness. 

Only turn the steak once & it will be ready for a flip once it releases without sticking. Invest in a pair of long handled tongs. You’ll use them time & time again.

The Beef Temperature Primer 

There are many tricks to gage when the steak has reached a desired temperature but a thermometer remains to be the most reliable & accurate. Follow these temperature ranges to reach your preferred taste.

Rare: 135 to 140 degrees

Medium-Rare: 140 to 145 degrees

Medium: 155 to 160 degrees

Well Done: 165 to 170 degrees
