Cajun Shrimp Nachos

 When hosting tailgating parties in your home during rivalry week, it’s a good idea to offer warm from the oven snacks, particularly when the weather is a bit cooler outside. Cajun Shrimp Nachos With Avocado Remoulade are topped with a host of fan-favorite ingredients. Once the cheese melts, be sure to serve them with the garnishes as they add beautiful color & good taste. Accompany with a round of signature cocktails such as Crimson Bloody Mary’s or an Auburn Sunrise to really get festivities underway.

Run The Option

Rotisserie chicken makes a good substitution for the shrimp. Try pepper jack cheese for a spicier flavor.

2 tsp Creole seasoning
1 tsp brown sugar
1/4 tsp dried thyme leaves
1 lb {26-30 count} fresh wild American shrimp, peeled & deveined
2 tsp oil, divided
1/2 cup chopped sweet onion
1 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1 garlic clove, pressed
1/2 {12-oz} bag tortilla chips
1 {8-oz} package shredded Mexican cheese blend, divided
Toppings: Sliced jalapenos, chopped fresh cilantro & sliced scallions
Avocado Remoulade

Preheat the oven to 350 degrees. Combine the Creole seasoning, the brown sugar & the thyme leaves. Coat the shrimp with the seasoning mixture. Heat 1 tsp oil in a 10-inch cast iron skillet over Medium-High heat. Cook the shrimp 4 to 5 minutes or until no longer pink. Remove the shrimp from the skillet & drain well. Pat dry with paper towels, if necessary. Heat the remaining 1 tsp oil in the same skillet over Medium-High heat. Sauté the onion for 2 minutes. Add the bell peppers & cook 2 more minutes. Add the garlic & cook 1 minute. Arrange the chips in a single layer on a lightly greased half sheet pan. Top the chips with 1 cup of cheese. Sprinkle the shrimp & vegetables evenly over the cheese. Top with the remaining 1 cup of cheese. Bake 10 minutes or until the cheese melts. Sprinkle with the desired toppings. Serve with the Avocado Remoulade.

The Basic Fundamentals

Prepare just before serving to insure the brightest color. 

1 {9-oz} avocado, peeled & diced
2/3 cup sour cream
4 tsp fresh lime juice
2 tsp Creole mustard
1 garlic clove, cut into pieces
1/4 cup fresh cilantro leaves
1 scallion, cut into pieces
1/2 tsp kosher salt
1/2 tsp paprika
1/4 tsp ground red pepper

Pulse all of the ingredients in the food processor until smooth. Use as directed.

Slather the sauce over toasted wheat bread & layer up a delectable BLT.

When purchasing shrimp, the count is a range of how many to expect per pound. They will need to be peeled & deveined. Remove the shells leaving the tails intact. Cut a small slit down the back of the shrimp. Use the tip of the paring knife to remove the vein. Rinse under cool water.
