The popular bar located just shy of campus on The Strip has been serving up a yellowhammer concoction for decades. Folks from all across the country make a bee line to Gallettes on game day to get a taste of the potent drink prepared in big batches by a recipe based off of liquor bottle & juice container sizes with a combination of vodka, light rum, amaretto, orange juice, pineapple juice & maraschino cherries. It’s blended in plastic water coolers that you may find on the sidelines of a high school football game & served in bright yellow souvenir cups. Inspired by the original notion, this version adds lively bubbles to the mix creating a libation worthy of a toast. Keep the blend well chilled until ready to serve.

Style Points

Cherries with stems are an easy way to garnish a cocktail. 

Yellowhammer Champagne Cocktail
makes 8 servings

2 cups pineapple juice, chilled
1 1/2 cups orange juice, chilled
1/2 cup light rum
2 Tbsp maraschino cherry juice
1/2 tsp almond extract
Champagne or sparkling wine, chilled
Garnish: Marachino cherries

Stir together the first 5 ingredients in a small pitcher.
Pour about 1/2 cup of the mixture into glasses filled with ice.
Top with the champagne. Garnish with cherries.
