Game Day Fiesta Dip
makes 10 servings
Game Changer
Pinto beans can be substituted for the black beans. For an even faster variation, pick up your favorite bean dip & season as desired to use as the base.
2 {15.25-oz} can black beans, rinsed & drained
3 Tbsp fresh lime juice
1 small chipotle pepper in adobo sauce
1 garlic clove, cut into pieces
1/2 tsp kosher salt
1/2 tsp ground cumin
1 {8-oz} container sour cream
1 cup shredded Cheddar cheese
Freshly ground pepper
Toppings: Black olives, grape tomatoes, scallions, avocado & jalapeños
Corn chips
Pulse the black beans, the lime juice, the chipotle pepper, the garlic, the salt & the cumin in a food processor until smooth. Spoon into a 1 1/2-quart casserole dish. Top with the sour cream & the cheese. Sprinkle with the desired toppings. Serve with corn chips.
The Extra Point
Fill flour tortillas with any remaining dip & grilled chicken for a quick supper.

How To Zest Fresh Citrus
A little lime zest is a wonderful way to add fresh notes to dips & spreads.
Pep up a variety of your favorite foods with this easy technique.
The Technique
Hold the microplane grater over a cutting board, allowing the tip to rest over the surface at an angle. Swipe just the outer portion of the citrus over the tool towards the board. Turn the fruit after each swipe. You only want to collect zest with color & not the white, bitter pith just underneath the surface. Repeat the process until you have collected the amount you’d like to add to the recipe.
