A classic Italian combination of fresh mozzarella cheese, basil leaves & tomatoes drizzled with olive oil, the simple notion makes a lovely Caprese Pasta Salad for a more substantial offering when tailgating & fall parties are in order. Accompany with pub-style cheeseburgers, grilled chicken kabobs & steak or pair it with a selection of delicious sandwiches. Caprese Pasta Salad
makes 10 servings

Try the salad with a variety of fresh dressing options from Lemon-Honey Vinaigrette to Bourbon-Mustard Vinaigrette.
1 {16-oz} box penne pasta
Gridiron Vinaigrette
Kosher salt & freshly ground pepper
1 {10-oz} package fresh Mozzarella pearls
2 pints grape tomatoes, cut in half
1-oz fresh basil, chopped
1 tsp crushed red pepper flakes
Cook the pasta according to package directions. Rinse under cold water to stop the cooking process. Drain. Toss the pasta with the dressing in a large bowl & season generously with salt & pepper. Stir in the remaining ingredients. Serve at room temperature or chilled.
The Extra Point
Serve the pasta salad during the week with grilled chicken or pork tenderloin.
Gridiron Vinaigrette
makes 1 cup
The Basic Fundamentals
Expect the white portion of scallions to have a sharper flavor so they have been omitted for a more mild, balanced taste.
6 small scallions
2/3 cup white wine vinegar
1/2 cup olive oil
2 Tbsp honey
3 garlic cloves, cut into pieces
1 Tbsp fresh lemon juice
Kosher salt & freshly ground pepper
Trim the scallions. Remove the white portion & save for another use, if desired. Slice the light & dark green portion & puree them with the next 5 ingredients on High speed in a blender until the scallions are finely chopped, about 1 minute. Stop to scrape down the sides using a rubber spatula as necessary. Season with salt & pepper. Use as directed.

How To Cook Pasta For Cold Recipe Applications
Pasta shapes & styles are designed specifically for the type of sauce or dressing that will be used in the final dish. The ridges on some varieties allow them to cling to the noodles providing optimum flavor. It isn’t difficult to prepare a perfect batch of pasta. You’ll get a pleasing flavor, texture & bite each time no matter the shape.
The Technique
Fill a stock pot or Dutch oven with 4 quarts of water. Season the water with 1/2 to 1 tsp kosher salt. Do not skip this step as the noodles will taste bland. Bring the water to a rolling boil over High heat. Add 1 pound of pasta to the water. Cook uncovered, according to specific recipe applications, stirring occasionally. Once cooked, drain the pasta in a large colander. Run under cold tap water to stop the cooking process for cold pasta preparation.
