Seasonal grilled Vidalia onion slices & good-for-you yogurt
make the potato chips worth the splurge.
Keep it healthier by offering an assortment of crudite.

makes about 1 1/2 cups

1 medium Vidalia onion
olive oil
Kosher salt & pepper
1 {6-oz} container plain non-fat Greek yogurt
3 Tbsp chopped fresh chives
1 Tbsp chopped fresh flat leaf parsley
2 tsp fresh lemon juice
Potato chips

Cut the onion into 3 to 4 thick slices.
Rub both sides of the onion slices w/ olive oil.
Sprinkle with salt & pepper.

Grill over medium-high heat, about 400 degrees, for 10 to 15 minutes
turning often or until the slices are charred & tender.
Cool for 5 minutes.
Coarsely chop the onion.

Stir together the yogurt, the herbs & the lemon juice in a medium bowl.
Fold in the chopped onion.
Taste & adjust the seasonings.
