The Basic Fundamentals

Prepare up to several hours before serving to maintain the best & freshest flavor. 

4 plum tomatoes, diced
1/4 cup diced red onion
1 small garlic clove, pressed
1 Tbsp fresh lime juice
1 Tbsp chopped fresh cilantro
Kosher salt & freshly ground pepper

Stir together the first 5 ingredients until combined. Season with salt & pepper the taste.

Slice the end from the tomato & discard.
Slice the tomato in half lengthwise.
Slice each half down the center again.
The tomato will be quartered.

Using a paring knife, slice the center pulp from the tomato, including the seeds.
There will be some seeds remaining in the cavity.
Use your thumb to push the remaining seeds away.
Cut the remaining pieces into a small dice.
