1 cup mayonnaise 
1 Tbsp Creole mustard
1 small clove garlic
Kosher salt & pepper
16 Buttermilk Pumpkin Yeast Rolls
1 lb thinly sliced grilled pork tenderloin

Combine the first 3 ingredients in a small bowl & season with salt & pepper. Split the rolls & fill with the pork.

The Technique

Prepare & bake Buttermilk Pumpkin Yeast Rolls as directed. To warm them before serving, preheat the oven to 350 degrees. Place the rolls on a half sheet pan. Brush the surface with an egg white & sprinkle pepitas over the top. Bake 5 minutes. Remove from the oven.
