Classic Spaghetti & Meatballs have long been a favorite Italian dish & they’re quite simple to prepare at home. The key is to avoid over blending the ingredients so use a rubber spatula & the technique of folding to combine them well. A standard ice cream disher portions  them effortlessly while freezing the meatballs helps them hold shape during cooking. makes 8 servings

Freeze the meatballs, uncovered, on a parchment paper-lined half sheet pan 2 hours, then place in a zip lock bag to store up to 1 month frozen.

1 lb ground beef
1 lb Italian sausage, casings removed
1 1/2 cups fresh breadcrumbs
3/4 cup finely grated Parmesan cheese
1/4 cup chopped fresh parsley, basil or oregano
4 garlic cloves, pressed
3/4 tsp kosher salt
1/4 tsp freshly ground pepper
1/4 tsp crushed red pepper flakes
3 eggs
1 tsp oil
1 small onion, diced
4 {24-oz} jars marinara sauce
1 lb cooked spaghetti noodles

Fold together the first 10 ingredients with a rubber spatula in a large bowl just until blended. Portion the mixture using a standard-size ice cream disher to yield approximately 16 {3-ounce} meatballs. Place onto a parchment paper-lined half sheet pan. The mixture will be sticky. Roll into uniform balls, if desired, & return them to the pan. Freeze 2 hours.

Sauté the onion in hot oil in a Dutch oven 5 minutes or until softened. Add the marinara sauce & stir in 3 cups water. Bring to a simmer over Medium-Low heat. Drop the frozen meatballs into sauce & simmer, partially covered, 25 to 28 minutes or until throughly cooked & a thermometer registers 160 degrees when inserted into the center of each one. Serve over cooked spaghetti noodles with additional sauce.

How To Make Classic Spaghetti & Meatballs

Meatballs may be formed in a variety of sizes. The main point to know is that they must be throughly cooked. Use a thermometer to gauge the temperature towards the end of the cooking time. Insert it in the center to get an accurate read. Once they register 160 degrees, turn off the heat & portion them over cooked spaghetti noodles.
