1 {3 1/2-4 lb} bone-in prime rib roast, trimmed & Frenched
2 tsp coarsely ground black peppercorns, freshly milled
2 tsp kosher salt
Fresh Rosemary-Garlic Relish
Moonshine Mustard Sauce

Let the beef stand at room temperature 1 hour. Preheat the oven to 475 degrees. Combine the salt & pepper in a ramekin. Rub the mixture on all sides of the beef. Place the beef, fat side up & bone side down, on a lightly greased rack over a foil-lined quarter sheet pan.

Bake 30 minutes. Reduce the oven temperature to 350 degrees & bake an additional 25 to 30 minutes or until the desired degree of doneness is reached. Remove from the oven & let stand for 20 minutes. Meanwhile, prepare the Fresh Rosemary-Garlic Relish. Brush over the top & sides of the prime rib. Prepare the Moonshine Mustard Sauce & serve with the beef.

Season the roast, then position it rib side down on a rack over a pan. Roast the beef as directed according to specific recipe instructions. After the beef rests, use a carving knife to remove the bones. Make a continuous cut between the bones & the beef. Position the beef upright again to carve slices for serving.
