Pâté is a forcemeat that may contain a variety of ingredients ranging from liver, ground pork, fish or beef to vegetables, herbs, spices & other seasonings. It’s quite simple to prepare & makes a wonderful appetizer to serve guests. Accompany with caper berries, gherkins & homemade bread or offer it as a star component to a beautifully arranged charcuterie board. Use only the freshest chicken livers & handle them with care. makes 10 servings

2 Tbsp butter, divided
2 Tbsp minced shallots
3/4 cup grated Granny Smith apple
1/4 cup white wine
1 1/4 lbs chicken livers, rinsed & drained
3 Tbsp heavy cream
1 1/2 Tbsp fresh lemon juice
1/2 tsp lemon zest
2 tsp roasted garlic
A handful of fresh parsley leaves
1 tsp chopped fresh rosemary
1/2 tsp kosher salt
A smattering of freshly ground pepper
1/4 cup butter, cut into pieces & frozen
Pain de Campagne

Melt 1 tablespoon butter in a medium skillet over Medium heat. Add the shallots & sauté 30 seconds. Stir in the apple & cook 3 minutes. Add the wine & cook 3 additional minutes or until the liquid evaporates & the shallots & the apple are tender. Place the mixture in the work bowl of a food processor. Swipe the skillet with a paper towel to remove any bits. Melt the remaining 1 Tbsp butter over Medium heat, then add the chicken livers in a single layer & cook 2 to 3 minutes on each side. Remove them from the skillet & place them in a bowl. Allow the chicken livers to stand 10 minutes. Discard any liquid that remains.

Place the chicken livers, the cream, the lemon juice, the lemon zest, the roasted garlic, the parsley, the rosemary, the salt & the pepper in the food processor with the apple mixture. Pulse until finely blended. Scrape down the bowl sides & pulse again. Add the butter to the food processor & pulse until smooth. Transfer the mixture to several ramekins. Chill 8 hours. Serve the pâté with Pain de Campagne.
