The Technique

Mornay Sauce

A Mornay Sauce may be used for a variety of recipes in the kitchen. It’s wonderful as a component to rich sandwiches or it may serve as the base for macaroni & cheese. A light roux is prepared by combining butter & flour & the technique is complete before any browning of the flour occurs. Milk or cream is then added whilst whisking vigorously over the heat. As the mixture gets hotter, it thickens. Seasonings may be as simple as kosher salt & freshly ground pepper but depending on the application for which it will be used, nutmeg offers additional depth of flavor. Lastly, it is the cheese that makes the sauce distinctive. Gruyère, Comtè, Cheddar & Jarlsberg are just some of the selections that flavor one flawlessly. makes about 1 1/4 cups

2 Tbsp butter 
2 Tbsp all purpose flour
1 1/3 cups whole milk
A pinch of kosher salt, freshly ground pepper & ground nutmeg
1/3 cup shredded Gruyère cheese

Melt the butter in a small saucepan over Medium heat then whisk in the flour until smooth & bubbly all over the surface. Gradually whisk in the milk & stir all over the bottom & the sides of the pan. Bring to a boil, whisking constantly, until the mixture bubbles vigorously over the surface. Cook 1 minute. Remove from the heat & whisk in the seasonings. Then add the cheese. Blend until completely smooth. Use as directed in specific recipe applications.
