One cup of cooked & seasoned farro may be added to the salad to boost the nutritional benefits for a more modern version of this crowd pleasing combination of ingredients.

6 cups chopped Romaine lettuce
1 cup grape tomatoes, sliced in half
1/2 cup black olives, sliced in half
1/2 medium cucumber, sliced
6 pepperoncini peppers
1/4 cup freshly grated Parmesan cheese
Kosher salt & freshly ground pepper
Buttermilk Parmesan-Peppercorn Dressing

Arrange the lettuce, the tomatoes, the olives, the cucumbers & the pepperonicini peppers on six salad plates. Top with Parmesan cheese. Season with salt & pepper. Serve with the Buttermilk Parmesan-Peppercorn Dressing

Position a microplane grater over a wooden cutting board & hold it at a 45 degree angle. Swipe the cheese over the surface to collect the amount needed for the recipe.
