Classic Tomato Soup

Homemade Classic Tomato Soup can be made quickly with crushed tomatoes, chicken broth & a few flavor enhancers & although tasty, this slightly chunky soup can be served with a smooth texture if desired. Blending hot soups can be tricky because if steam builds up in the blender or if it is overfilled, it can expand & rocket out all over you & your kitchen. The safest method to puree soup is to blend it when cold. Allow the soup to cool completely & pulse it in batches in a blender until smooth. Place the soup in a Dutch oven & reheat over Low until hot. If a creamy texture is desired, add a splash of buttermilk or heavy cream for a luscious variation. Serve the soup with a Homemade Grilled Cheese or use a panini press to make a batch of Grilled Cheese Croutons using slices of Farmhouse White Bread as both are delicious ways to accompany this comforting meal solution.

Be sure to use a non-reactive vessel to prepare the soup. Stainless steel & enamel interiors are good choices. They prevent metallic flavors from highly acidic foods. Avoid cast iron or pans made with copper or aluminum interiors. 

2 Tbsp olive oil
1 large sweet onion, diced
2 garlic cloves, pressed
2 {28-oz} cans crushed tomatoes
4 cups chicken broth
2 Tbsp sugar
1/2 tsp kosher salt
1/2 tsp crushed red pepper flakes
1/4 tsp black pepper
1/3 cup chopped fresh parsley
A splash of heavy cream

Sauté the onion in hot oil over Medium heat & cook, stirring occasionally, until softened, about 8 minutes. Add the garlic & cook for 1 minute or until fragrant. Stir in the tomatoes, the broth, the sugar, the salt, the red pepper flakes & the pepper. Bring to a simmer over Medium-High heat. Reduce the heat to Low, cover partially with the lid & simmer for 30 minutes. Stir in the parsley. Add a splash of heavy cream, if desired.

Spread Farmhouse White Bread slices with coarse grain or Dijon mustard. Top with upper crust cheese favorites such as Gouda, Gruyere or Provolone. Brush the exterior of the filled sandwiches with melted butter. Cook in a hot panini press until golden brown & the cheese pulls. Cool a few minutes & dice the sandwich into cubes. Sprinkle the Grilled Cheese Croutons over each serving of hot soup.
