1 tsp olive oil
1 medium onion, diced
2 carrots, peeled & diced
2 celery ribs, diced
3 garlic cloves, pressed
3 oz tomato paste
2 Tbsp fresh herbs such as rosemary, parsley & thyme, chopped
1/2 tsp kosher salt
1/4 tsp crushed red pepper flakes
1/4 tsp freshly ground black pepper
10 cups water
1 Tbsp chicken stock base
3/4 cup lentils
Garnishes: Fresh herbs, lemon wedges & Parmesan cheese
Rustic Country Boule

Sauté the onion, the carrots & the celery in hot oil over Medium heat in a Dutch oven stirring occasionally until softened, about 8 minutes. Add the garlic & cook for 1 minute or until fragrant. Add the tomato paste, the fresh herbs, the salt, the red pepper flakes & the black pepper. Stir together the water & the chicken stock base; stir into the mixture. Bring to a simmer over Medium-High heat. Reduce the heat to just under the Medium setting & simmer for 15 minutes. Stir in the lentils & cook 20 minutes or until the lentils have a toothsome bite. Season with additional salt. Garnish, if desired.

The Fresh Herb Lentil Soup

Season with additional salt, if desired. Serve with fresh herbs, lemon wedges, Parmesan cheese & the bread.

The Remaining Soup

Cool the soup down quickly by adding ice cubes to it. Stir until the ice melts. Place in the fridge with the lid partially covering the pot until completely cool. The ice will slightly dilute the flavor however it will naturally reduce a smidgen as steam when reheated. Readjust the seasonings, if necessary.
