The Last Week of October Up To November 19

Old-Fashioned Buttermilk Cornbread should essentially be the first item that is prepared from scratch as it will be needed to make the dressing recipe. It may be baked, crumbled & placed in a zip-top plastic bag then frozen up to 3 weeks before making the dressing. Just be certain to thaw it in the refrigerator 24 hours before using. You may also block time during the dressing preparations & use it right away.

1st Week of November Up To November 20

Old-Fashioned Cornbread Dressing & Classic Sweet Potato Casserole may be prepared up to 3 weeks before Thanksgiving Day & placed in the freezer. Prepare the recipes as directed. Do not bake. Cover the casserole dishes with plastic wrap & place in the freezer. Thaw the casseroles in the refrigerator over night. They may also be prepared 2 days before Thanksgiving & refrigerated. Look to individual recipes for additional valuable pointers & tips.

Thanksgiving Day 

Blanch the green beans several hours ahead of time. 

Remove filled casserole dishes from the refrigerator at least 30 minutes before baking. Re-adjust the oven temperature once the turkey has been removed & place the dressing into the oven to bake. Add the sweet potato casserole 20 minutes later. Since these items will be baked together, allow up to an additional 15 minutes of time in the oven so both items will be hot & register safe temperatures using a digital thermometer. Focus on gravy preparations next.

If there is ever a time to serve homemade yeast rolls, it is Thanksgiving Day. Yeast rolls are not difficult to make in the least. In less than 10 minutes of prep time, it is simply a matter of allowing the dough to rise, shape & rise again before baking. The Timeline

1st Week of November Up To November 21

Prepare & bake the rolls up to 3 weeks before Thanksgiving Day. Allow the rolls to cool completely. Place in zip-top plastic bags & store them in the freezer. Remove the frozen rolls & place them in the refrigerator to thaw at least 12 hours the day before Thanksgiving. They may also be removed from the freezer early in the day on Thanksgiving & placed on the countertop with the bag partially open to thaw. Set aside approximately 2 hours for them to be ready for warming in the oven.

Thanksgiving Day

Rolls that have been prepared in advance will need to be heated. Complete this task about 15 minutes before the meal is to be served. Place them in a single layer on a half sheet pan, cover loosely with foil & warm in a 350 degree oven for 6 to 8 minutes. Transfer the rolls to a bread basket lined with a linen & cover them to keep warm.
